We try to eat as much as we can in the truck, I personally can‘t stand some fast food places because that’s all there is in the truck stop. I would rather eat a peanut butter sandwich than some fast food places. When we shop we try to plan out meals and have a few fast options depending on our runs. We use the convection oven in the microwave, crockpot, electric skillet, and toaster/air fryer/oven. I have made all kinds of meals from scratch. Let’s share with each other our meals that we make and maybe even post recipes , like today we are up in Minnesota where it will be -24 so Todd is going to put together a ham/potato/corn chowder in the crockpot. this will make enough for several meals and is so good . Shout out how you cook, what you cook and any tips or trick you use in the truck.

Hi, there! I'm not in a truck - but we also cook at home pretty much every night! Eating out is expensive (and unhealthy), and not easy with a 4 year old in tow.
One of my favorite breakfast meals is made in a crockpot - oatmeal! it is inexpensive, healthy and will last you most of the week :)
I use crockpot bags for ease of clean up -
2-3 apples, peeled, cored and diced (I use Granny smith)
1 1/2 cups milk (or milk subsitute)
1 1/2 cup water
1 cup steel cut oats (uncooked)
2 tablespoons brown sugar (or maple syrup, or substitute, etc)
1-2 tablespoons of butter (or substitute)
1/2 teaspoon cinnamon (or just dump in a bunch like I do - I also add nutmeg, just because I like it. I've made it with pumpkin pie spice too)
1 tablespoon ground flax seed (I don't put that in because I never have it on hand)
pinch of salt
mix that all together, cook on low 7-8 hours. to reheat just put in a bowl, add a splash of milk and microwave. I top with walnuts or chia seeds (and sometimes more brown sugar b/c I have a sugar addiction).
