So today I made some green chili chicken enchiladas in our toaster oven.
Recipe : I put the amounts I used today you can add or subtract for you depending on how many your making.
Chicken ( I bought rotisserie chicken that was already cut up ) about a pound and half
1can green chili sauce
1 block cream cheese softened to room temperature
1 can cream of chicken soup
1 can refried beans
1 bag of shredded cheese
1 pkg of tortilla shells
Mix everything but the refried beans and cheese (use only a little of the green chili sauce in the mixture) in a bowl.
Spread the refried beans on your tortilla shell all over then put some of the chicken mixture in a line across the shell
Pour a little green chili sauce over the chicken and then cover with cheese.
Roll up your shell and place in a cooking pan and repeat.
You can make them as thick or thin as you want. Once that is done pour more of the green chili sauce over the enchiladas and bake. for us I made two large and three small enchiladas. Bake for about 30 min then add more cheese on top and bake for about another 15-20 mins until bubbly.
I will use sour cream salsa on to or what ever you want.
